Ingredients For Pasta Soup

  • Chickpeas- 1 cup
  • Pasta- 1/2 cup
  • Vegetable stock- 2 cups
  • chopped Onion- ½
  • chopped Garlic- 1 piece
  • chopped Carrot- ½
  • Parsley Leaves- 3 sprigs
  • Vegetable oil- 2 tbsp
  • Tomato Sauce- 3 tsp
  • Salt as needed
  • Pepper as required

How To Make Pasta Soup

  • Keep the chickpeas soaked in water overnight.
  • Use pressure cooker to cook it in water and set aside the next day.
  • Take a pan and heat oil in it. Sauté garlic and onions in it.
  • Pour in the vegetable stock and add pasta, parsley leaves and carrots into it.
  • Bring it all to a boil, put on the lid and lower the heat.
  • Let is simmer till all the vegetables are cooked.
  • Put in the chickpeas and also the tomato sauce.
  • Season with salt and pepper.
  • Let the soup simmer for few more minutes and then serve it hot.
