Ingredients For Lemon Noodles

  • rice noodles- 2 cups
  • water- 6 cups
  • lemon juice- ¼ cup

For Seasoning

  • vegetable oil- 6 tsp
  • a pinch of Asafoetida powder
  • Turmeric- ¼ tsp
  • chana dal- 2 tsp
  • mustard seeds- 1 tsp
  • whole red chilies- 4 to 5
  • finely chopped green chilies- 5 to 6
  • cashews- 10 to12
  • curry leaves 7-8

How To Make Lemon Noodles

  • Boil water in a deep pan.
  • Put noodles in boiling water and cook for 5 minutes.
  • Drain out the hot water and drop into cold water. Drain out water again.
  • Take a small pan and heat oil. Add in asafoetida, cashews, chana dal and fry for a few seconds.
  • Put in green chilies, mustard seeds and whole red chilies.
  • Once the mustard seeds begin to splutter put in turmeric powder and curry leaves.
  • Mix in this seasoning with the noodles and toss in salt and lemon juice as well.
  • The noodles can be served either hot or cold.
