Ingredients For Spicy Carrot Pickle

  • Peeled and sliced large carrots- 2 lbs
  • Diced and peeled garlic- 5 cloves
  • Vinegar- 1 ½ cups
  • Water- 1 ½ cups
  • Bay leaves- 10
  • Peppercorns- 8
  • Salt to taste
  • Pickled jalapenos- 6 oz.

How To Make Spicy Carrot Pickle

  • Saute garlic in oil in a large saucepan. Toss in the carrots and fry them for 2-3 min. now add peppercorns, vinegar, bay leaves and salt. Let it simmer for 5 min and then add jalapenos and water. Let it cook for 10 min at low flames.
  • Take off the flames and cool it. Transfer to an airtight container and store it in a fridge for the night.

Some Useful Tips

  • You may or may not remove bay leave after the spicy carrot pickle is ready. Just don’t eat them.
