Ingredients For Stir Fish Fry

  • White fish- 200g
  • Thinly sliced ginger- 5 cm
  • Spring onions- 3
  • Finely chopped garlic- 4
  • Hot water- 150 ml
  • Corn flour- 1tbsp (mixed with 3 tbsp water)
  • Cooking oil- 200 ml

Seasoning

  • oyster sauce- 1 tsp
  • salt to taste
  • MSG- a pinch
  • Chinese cooking wine- ¾ tbsp
  • White pepper powder

How To Make Stir Fish Fry

  • Cut fish into small pieces and then marinade with salt. Rub some flour on them and leave it for 10 min.
  • Heat oil to a very high point in wok. Drop in the fish slices and fry them for 30 seconds on both sides and make sure they do not break. Remove fish pieces and set aside.
  • Empty the wok of oil except 1 tbsp oil. Sauté garlic and ginger till they are done. Add in the spring onions and stir evenly before putting in fried fish slices.
  • Pour two cups of water. Add corn flour to thicken the gravy.
  • Take out and serve hot with plain steamed rice.
