Ingredients for Thai Coconut Chicken

  • Dry jasmine rice-2 cups
  • Water-3 cups
  • Cubed  boneless, skinless chicken breast halves – 1 1/2 pounds
  • curry powder-1 tablespoon
  • asparagus-1 inch pieces
  • snow peas-1 cup
  • shredded carrots-1/2 cup
  • chopped green onions-1 cup
  • light coconut milk-1 (14 ounce) can

How to make Thai Coconut Chicken

  • Firstly take a 2 quart saucepan and mix rice and water in it.
  • Now cover it properly and start boiling it over a high flame. Now reduce the flame and allow it to cook for 20 minutes.
  • Now take a medium size bowl and mix chicken and curry powder in it and toss it nicely to form a coating.
  • Now take a large nonstick skillet and coat it with cooking spray.
  • Start cooking it and stir it regularly and do this on a medium-high flame for about 4 minutes.
  • Now combine snow peas, green onions, carrots and asparagus in it and cook it for about 3 minutes.
  • Finally pour some coconut milk in it and continue the cooking process till sauce gets hot, and the whole chicken is properly cooked.
  • It can be served well over the hot cooked rice.

Some Useful Tips

If you are thinking of preparing garlic, fresh chili and ginger pastes at home, then make sure you add tablespoon of canola/hot vegetable/ sunflower cooking oil to the paste and mix it well this will ensure a longer life for the paste prepared. Refrigerate and use it as per your requirement.
