Ingredients for Mughlai Chicken Curry

Chicken Marinade

  • 1 lb boneless chicken
  • Ginger- 1 inch piece
  • Garlic- 6 cloves
  • Green chilies- 7
  • Curd- 1 cup
  • Salt to taste
  • Turmeric powder- ½ tsp
  • Garam masala- 1 tsp
  • Coriander leaves- 1 bunch

Dry Masala

  • Cloves- 5
  • Peppercorns- 5
  • Cinnamon- 1 small piece
  • Cardamoms- 2
  • Almonds- 5
  • Coriander seeds- 1 tbsp
  • Cumin seeds- 1tsp

For Curry

  • Thinly sliced onion, big- 1
  • Tomatoes (medium size), blanched and pureed- 4
  • Cashew nut paste- 1 cup
  • Ghee or oil
  • Chopped coriander
  • Lemon juice

Mughlai Chicken Curry

How to make Mughlai Chicken Curry

  • Form a smooth consistency curd by mixing it with 1 tbsp water.
  • Form a paste by grinding garlic, ginger and green chilies altogether.
  • Mix this paste with curd, garam masala, salt and turmeric powder.
  • Make small incisions on the chicken pieces and then drop them in the marinade.
  • Add copped corianders and keep aside the chicken for half an hour.
  • Take a pan and fry the ‘dry masala’ ingredients and make them into a fine powder.
  • Fry the onions till they are brown and then grind them into a paste. Add in the ground masala powder and churn it again.
  • Take a pressure cooker and oil into it and fry the ground masala.
  • Take out the chicken and fry them lightly.
  • Drop them into pressure cooker and fry for 5 minutes.
  • Pour in the remaining curd marinade, salt, coriander leaves, chili powder, tomato puree, cashew nut paste and put the lid on the cooker and cook for 20 minutes
  • Squeeze a lime and garnish with coriander.

Some Useful Tips

    Instead of cashew nut paste you can also use chickpea flour to thicken the gravy
