Ingredients for Mango Chicken Curry

  • Chicken breasts cut into 2 inch pieces- 3
  • Red bell pepper- 1
  • Oil- ¼ cup
  • All purpose flour- 1 cup (mixed with ½ tsp salt)
  • Fresh coriander- ½ cup

Mango Sauce

  • Fresh ripe mangoes- 2
  • Chili sauce-1 tsp
  • Rice vinegar- 1 tbsp
  • Soy sauce- 1 ½ tbsp
  • Fish sauce- 3 tbsp
  • Lemon juice – 1 tbsp
  • Brown sugar- 1 tbsp
  • Sliced ginger- 1 tbsp
  • Garlic- 3
  • Turmeric powder- ¼ tsp
  • Zest of 1 lime
  • Optional: mango cut into chunks- 1
  • Optional: coconut milk- 4 tbsp

Mango Chicken Curry

How to make Mango Chicken Curry

  • Take the ingredients for ‘Mango sauce’ and blend them into a blender or processor.
  • Make sure that sauce is rightly seasoned. Adjust accordingly
  • Gently coat the chicken pieces into flour and salt.
  • Heat up a frying pan and pour oil in it. Now place the chicken pieces in it and fry them till they are golden brown and cooked through. Take them out and soak up excess oil on paper towels.
  • Take another pan and pour in the mango sauce as well as bell peppers. Boil it all once and then lower the temperature and let it simmer. Add coconut milk if you thick sauce is too thick. Cook for 3-4 minutes.
  • Toss in the chicken pieces and fold them into the sauce. You can also add in the mango pieces if desired. Simmer a bit until all is cooked and hot.
  • Take out and garnish with coriander and serve with Thai jasmine rice.
