Ingredients for Malabar Masala Chicken Curry

  • 1 kg chicken
  • 3 ground onions
  • 2 ground tomatoes
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • ½ cup coconut milk (thick)
  • 1 cup coconut milk (thin)
  • 1 tsp chili powder
  • 2 tsp coriander powder
  • ½ tsp coriander powder
  • 1 tsp garam masala powder
  • 1 stalk of curry leaves
  • 1 tsp mustard powder
  • 3 cloves
  • Salt to taste
  • Oil as required for frying

How to make Malabar Masala Chicken Curry

  • Take a pan and heat up oil in it.
  • Drop in mustard seeds and let them splutter.
  • Put in curry leaves and cloves.
  • Toss in tomato and onions and sauté them.
  • Once the onions are brown, add ginger- garlic paste and fry till all the raw smell goes away.
  • Toss in the chicken pieces along with chili powder, turmeric powder, coriander and garma masala.
  • Keep stirring and make sure they are mixed well.
  • Pour in thin coconut milk.
  • Add water if needed and salt to taste.
  • Once chicken is done add thick coconut milk and let it simmer for another 5 minutes.
