Ingredients for Dum Kokur

  • Whole chicken cut into 8 pieces
  • Oil – 5 tbsp
  • Cloves- 4 to 5
  • Bay leaf- 1
  • Cinnamon bark- 1 inch
  • Thinly sliced medium onions- 1
  • Grated ginger- 1 tbsp

For The Marinade

  • Curd- 3 tbsp
  • Red chili powder- 1 tbsp
  • Turmeric powder- ½ tsp
  • Salt as needed
  • Ginger paste- 1 tbsp
  • Garlic paste- 1 ½ tbsp

Grind Together

  • Cumin seeds- ½ tsp
  • Black cardamom- 2
  • Green cardamom - 2

How to make Dum Kokur

  • Prepare the marinade by mixing all the ingredients of the marinade and marinate the chicken. Let the marinated chicken sit for 2-3 hours.
  • Heat up some oil and drop in cloves, bay leaf and cinnamon bark. Stir fry them for 2-3 minutes.
  • Toss in grated ginger and onions and fry them till onions are golden brown.
  • Drop in the marinated chicken and continue cooking.
  • Add cumin and cardamom.
  • Out on the lid and cook for another 30 minutes or till chicken is tender.
  • Serve the dish hot

Some Useful Tips

    Put some peppercorn in salt to avoid them from getting wet in winters.
