Ingredients for Chicken With Cashew Nuts

  • Chicken thigh (sliced)- 300g
  • Cashew nuts (fried)- 1/3 cup
  • Minced garlic cloves- 3
  • Chopped dried chilies- 5
  • Chopped red and green spur chilies- 2
  • Peeled and boiled water chestnut- ½ cup
  • Spring onions (cut into 1.5 inch pieces)- ¼ cup
  • Corn flour- ½ cup            
  • Chopped onion- 1
  • Vegetable oil- 1 tbsp     
  • Roasted chili paste- 1 tbsp
  • Tomato sauce- 1 tbsp
  • Oyster sauce- 2tbsp
  • Soy sauce- 1 tbsp
  • Sugar- 1 tbsp
  • Salt to taste

Chicken with Cashew Nuts

How to make Chicken With Cashew Nuts

  • Take egg white, corn flour and a pinch of salt in a bowl. Drop in chicken breast strips and mix them.
  • Heat up groundnut oil in a wok at high flame and deep fry the chicken until it becomes golden brown. Take it out and drain excess oil on absorbent paper.
  • Take a frying pan, put 1 tbsp oil and heat it at high flames. Throw in garlic, ginger and onions and fry for 2-3 minutes. Pour in chicken stock and sprinkle a pinch of sugar.
  • Toss in spring onions and sliced peppers and stir fry for 2 minutes. Drop in the chicken and cashew nuts. Sprinkle with a bit of soy sauce before serving it.

Some Useful Tips

    To make sure your homemade chili, garlic and ginger paste stays fresh for long add a tbsp of hot vegetable/ sunflower/ canola oil into it and mix well. Keep them in refrigerator and use when necessary.
