Brief Description

Literally Mulligatawny means pepper water. It is a combination of curry powder, chopped apple, rice, chicken breasts, and cream.

Ingredients for Chicken Mulligatawny Curry

  • Canola oil - 1 tbsp
  • Diced large yellow onion - 1
  • Diced celery - 2 stalks
  • Minced garlic - 3 cloves
  • Peeled and diced  Granny Smith apples – 2
  • Hot madras curry powder - 1 1/2 tsp
  • Ground cumin seeds - 1/2 tsp
  • Ground coriander - 1/2 tsp
  • Ground ginger - 1/2 tsp
  • Sodium chicken broth - 6 cups reduced
  • White basmati rice - 1/2 cup
  • Bite size chicken broth - 12 ounces
  • Coconut milk - 1 cup
  • Lemon juice - 1 tbsp
  • Salt - 1/4 tsp
  • Fresh ground pepper - 1/4 tsp
  • Sliced and roasted almonds - 3 tbsp

Chicken Mulligatawny Curry

How to make Chicken Mulligatawny Curry

  • Heat oil in a large skillet over medium flame. Add celery, onion, and garlic; stir and cook until they get tender.
  • Now add apples, cumin seeds, curry powder, ginger and coriander; stir and cook until the apples get tender.
  • Now again add chicken broth and rice. Make them boil.
  • Reduce the flame to low, do not cover the skillet and cook for about 12 minutes.
  • Add pieces of chicken, cook until the chicken becomes tender. Now pour coconut milk and mix it properly.
  • Now remove the skillet from the gas and keep aside.
  • Add lemon juice, pepper, and salt.
  • In the end garnish it with almonds and coriander leaves.

    Hot Madras curry powder adds a good level of heat to the food. It is situated in the Masala of most supermarkets. It is also a substitute of regular curry powder.
