Chicken Malai kebabs are prepared by seasoning the chicken with the paste of garlic – ginger and keeping them overnight. This is a very delicious dish.

Ingredients for Chicken Malai Kebabs

  • Chicken breasts - 500 gm
  • Green chilies - 6-8 big
  • Finely chopped - 2 tablespoon
  • Leaves of mint - 2 tablespoon
  • Garlic - 12 cloves
  • Almonds – 8 to 10
  • Fresh cream - 3/4 cup
  • Ginger - 1 inch pieces
  • Lemon juice - 1 tablespoon
  • Yogurt - 5 tablespoon
  • Oil as per requirement
  • Salt acc to taste

How to make Chicken Malai Kebabs

  • Properly wash and cut the chicken breasts into 1 1/2 inch of cubes.
  • Now grind the almonds, green chilies, mint, ginger-garlic, and coriander leaves. Make a smooth paste of it.
  • Now marinate the chicken with this paste.
  • Now mix the yogurt and stir it well. Add salt acc to taste.
  • Keep the marinated chicken overnight for best taste.
  • Now place the chicken on skewers. Sealed it using threads. Cook them on grill by applying ghee or butter.
  • Chicken Malai Kebabs are ready to eat. Serve them with mint chutney or coriander chutney.

Some Useful Tips

  • If you want to prevent your bamboo skewers from burning while cooking let them soak in water for about 1/2-1 hour before using them.
  • You can also use red/ green peppers and some fine chunks of onions onto skewers, in mid of the chicken.
