Ingredients for the recipe

  • Whole unsalted cashews - 1/4 cup
  • Boneless and skinless chicken breasts - 1 pound, cut them into pieces of size 1-inch.
  • Salt acc to taste
  • Vegetable oil- 1/4 cup
  • Black mustard seeds - 1/4 tablespoon
  • Cumin seeds- 1/4 tablespoon
  • Ground coriander - 1/4 tablespoon
  • Curry powder- 1 tablespoon
  • Thinly sliced 1 onion medium sized.
  • Finely grated ginger -1 tablespoon
  • Minced garlic clove -1
  • Unsweetened coconut milk - 1 (14 ounce) can
  • Frozen peas - 1/4 cup
  • Chopped cilantro -2 tablespoon

How to make Chicken Curry With Coconut

  • Preheat the oven up to 350°F.
  • Spread some cashew nuts on a pie plate and bake them for five minutes. Or you can roast them. Keep aside to let them cool.
  • Now apply salt to the chicken.
  • In a bowl having large depth, heat about 3 tablespoon of oil until it starts smoking.
  • Now add seasoned chicken to the oil, cook it about 1 ½ hours each side, until the color on both sides changes to golden brown.
  • Now moved out the cooked chicken to a plate.
  • Let the flame be slowed down.
  • Now add the remaining oil to the pan and cook it until smoked. Add mustard seeds into the pan. Cook these mustard seeds until they stops popping. Add other ground ingredients and cook for about 1 minute. Make sure that the flavor should be added to the oil.
  • Now add finely grated garlic, ginger, and onion to the skillet. Cook them about 10 minute. Make sure that the color of the onion becomes brown. If the mixture seems dry or sticky, add water as per requirement.
  • Boil the coconut milk by adding all the mixture. Flame should be low. Also add chicken to the pan and cook for about 5 minutes. Add peas also and cook.
  • Now the chicken is ready.
  • Transfer it to the plate, shower some cilantro and cashews over it, and serve hot.

Some Useful Tips

    If you prefer making paste of garlic, ginger, and fresh chili at home, then don’t forget to add canola/ sunflower/ or vegetable oil to it. Mix it well. Refrigerate it and use as if required.
