Ingredients for Kanji ke Vade

  • Urad Dal- 1 kg
  • Asafoetida- a pinch
  • Salt- 3 tsp
  • Finely ground Mustard seeds- 4 tsp
  • Red Chili flakes- 2 tsp
  • Water- 6 jugs
  • Oil
  • Red chilies for garnishing

How To Make Kanji ke Vade

  • Urad dal needs to be soaked overnight and then ground into a cake batter like consistency.
  • Whip the batter till it is fluffy.
  • Take a pan and heat oil for deep frying.
  • Put in a teaspoon worth drops of the batter in the oil for deep frying.  
  • Take them out and drain any excess oil.
  • Take a pot and fill it with water and mix in crushed mustard seeds, asafoetida, red chili powder and salt.
  • Add in the vadas to the pot.
  • Cove the top of the pot with a muslin cloth and place it under the sun for a week.
  • Kanji Ke Vade will be ready to be served in a week.
